Lemon Sevai

Ingredients to make Lemon Sevai

  • Sevai (rice vermicelli) - 2 cups
  • Juice of 1 big lemon
  • mustard seeds - 1 tsp
  • urad dal - 1 tsp
  • chana dal - 2 tsp
  • Green chilies - 2, finely chopped
  • 1 sprig curry leaves
  • Tumeric powder - 1 tsp
  • salt to taste
  • oil - 2 tsp

How to make Lemon Sevai

  1. In a large bowl, add the rice vermicelli and pour boiling salted water just enough to immerse the vermicelli. Cover and set aside for 10 minutes. Drain excess water
  2. Heat oil in a pan and splutter mustard seeds
  3. Add the urad and chana dal and fry until they turn golden brown.
  4. Add the chopped green chilies, curry leaves, turmeric powder.
  5. Add the drained vermicelli and mix well. Check for seasoning and adjust.
  6. Remove from heat, add lemon juice , mix well and serve hot
