A full meal with curry leaves powder,green gram rasam, green gram dal, spinach kichadi, ladies finger fry and mint chutney

Ingredients Serving: 4

  1. For Rasam
  2. 2 Tomatoes cooked and mashed
  3. 1/2 cup Green gram dal cooked and mashed
  4. Pepper 1 tablespoon
  5. jeera 1 teaspoon
  6. 6 garlic cloves
  7. coriander seeds 1 tablespoon
  8. coriander leaves 1/2 cup
  9. 3 tbsp Coriander leaves finely chopped for garnishing
  10. 1/2 tsp Turmeric
  11. Hing - pinch
  12. 1 tsp Mustard seeds and 1 sprig curry leaves
  13. 1 tsp oil
  14. For mint chutney : Mint leaves 1 cup
  15. 2 Green chilies
  16. 1 Garlic clove
  17. Tamarind a small piece
  18. Salt to taste
  19. For ladies finger fry: Sliced ladies finger 1 cup
  20. Chilly powder 1 tablespoon
  21. Turmeric powder 1/2 teaspoon
  22. Curry leaves powder 1 teaspoon
  23. Oil 3 tablespoon
  24. For spinach kichadi Spinach 1 cup
  25. Green gram dal 1/4 cup
  26. Coconut grated 1/4 cup
  27. Garlic 2 numbers
  28. Jeera 1/2 teaspoon
  29. Green chilly 2 numbers
  30. For Curry leaves powder Curry leaves 1 cup
  31. Green chilly 2 numbers chopped
  32. Chana dal 1/4 cup
  33. Pepper 2 tablespoon

Instructions

  1. For rasam: grind pepper, jeera, garlic, coriander seeds to fine powder
  2. Add ground spices to mashed tomato, coriander leaves , green gram dal in a pan. Mix well and cook for 2-3 minutes
  3. Add hing, turmeric powder and salt,Mix well and cook for a minute
  4. Heat oil in a pan, splutter mustard seeds, add curry leaves. Add the seasoning to Rasam
  5. For mint chutney
  6. Grind all the ingredients mentioned under chutney to a smooth paste. keep it aside
  7. For ladies finger fry
  8. In a kadai, splutter mustard seeds and jeera
  9. Add curry leaves and ladies finger
  10. Add Red chili powder,salt, turmeric powder and curry leaves powder
  11. cover and cook for 5 minutes
  12. Cook uncovered until water has evaporated
  13. For spinach kichadi
  14. Pressure cook chopped Spinach , green gram dal for one whistle
  15. Grind coconut,jeera, turmeric powder, chilly powder and garlic coarsely and add to cooked spinach
  16. Season with mustard and curry leaves
  17. For Curry leaves powder
  18. Dry roast all ingredients and powder it
  19. Serve all the dishes hot with rice,ghee and curry leaves powder.
