ABOUT Andhra Gongura Pappu RECIPE

Gongura (sorrel leaves) are very rich in iron, vitamins and folic acid. They are used extensively in Andhra cuisine. Today's recipe is a simple and delectable gongura pappu. It is either made plain or with some additions like spinach, sorrel leaves, tender tamarind leaves, amaranth leaves etc etc..

Ingredients Serving: 4

  1. Toor dal - 1 cup
  2. Gongura leaves 1 cup (adjust)
  3. Onion 1 small
  4. Garlic 1 tbsp (crushed coarsely)
  5. Green chilies 1-2
  6. Coriander leaves handful (optional)
  7. Turmeric powder 1/4 tsp
  8. Red chili powder 1/4 tsp (optional)
  9. Salt to taste
  10. For Seasoning
  11. Mustard seeds 1 tsp
  12. Cumin seeds 1 tsp
  13. Red chilies 1-2 broken
  14. Asafoetida 1 pinch
  15. Curry leaves 1 sprig
  16. Oil 4-5 tbsp

Instructions

  1. Pluck the sorrel leaves, wash them with warm water to remove the dirt. Chop coarsely and keep it aside
  2. Boil the soaked dal with little salt and turmeric powder.
  3. Heat oil in a pan and add the seasoning ingredients.When they crackle, add the crushed garlic, saute until aromatic.
  4. Add sliced onion and green chilies. Saute until it is light brown. Now add the gongura leaves and coriander leaves.
  5. Add the salt, turmeric powder and chili powder. Mix well for few seconds
  6. Add the boiled toor dal. Mix well
  7. Serve hot with plain rice and any side dish of your choice.
