Ingredients Serving: 2

  1. 2 tbsp Honey
  2. 1 tbsp Mustard
  3. 1 tsp Black pepper powder
  4. 1 tsp Grated lemon peel
  5. 2 Cloves garlic crushed
  6. Salt and Pepper to taste
  7. 500 g Lamb leg/shoulder piece
  8. 1 tbsp Chopped chives

Instructions

  1. In a bowl, mix honey, mustard, chives, crushed garlic, lemon peel, black pepper powder and salt. Now rub this mixture on the lamb nicely. Refrigerate overnight to marinate.
  2. Preheat oven to 220C. Place the marinated lamb on a grill or roasting plate. Sprinkle some pepper and salt.
  3. Bake the lamb for about half hour at 220 C. Reduce heat to 200C and roast again for another 50 mins.Turn off oven and let it rest for 15 minutes.
  4. Carve the lamb and garnish with chives.
  5. Serve hot.
