Hara Bhara Pulao

Ingredients to make Hara Bhara Pulao

  • 400g potatoes peeled
  • 1 bunch of mint leaves
  • 1 bunch of curry leaves
  • 4-5 green chilies
  • 3-4 teaspoon sliced ginger
  • salt to taste
  • 2 cups cooked basmati rice
  • 3-4 spoons ghee
  • 1 cup cashew nuts
  • Spices - 3-4 elaichi
  • 4-5 coves
  • 1 bay leaf
  • 2-3 cinnamon sticks
  • 3 cups peas
  • Small bunch of cauliflower
  • 3 cups water
  • 1 cup finely chopped onions

How to make Hara Bhara Pulao

  1. Cut the potatoes into large cubes
  2. Add a cup of water in a pan and cook the vegetables for 10 minutes
  3. Blend curry leaves, ginger, mint , green chilies to smooth paste
  4. Add this mixture to vegetables and cook
  5. Add salt and mix well
  6. Cook rice separately. Add veggies to rice and gently mix. Keep it aside
  7. In a separate pan , add the ghee and saute onions and whole spices until onions are tender
  8. Add onion seasoning to pulao and Gently mix. serve hot
