Ingredients Serving: 4

  1. 2 cups poha/flattened rice
  2. 1 onion finely chopped
  3. 1 potato finely chopped
  4. 1/2 carrot finely chopped
  5. 2 Green chilies finely chopped
  6. 1/4 cup fried peanuts
  7. 1 tbsp oil
  8. 1/2 tsp mustard seeds
  9. 4-5 Curry Leaves
  10. Pinch of Asafoetida
  11. 1 tsp sugar
  12. Salt to taste
  13. For coriander paste:
  14. 1 1/2 cups coriander leaves
  15. 1 tbsp lemon juice


  1. Wash the flattened rice and drain completely, keep it aside
  2. Grind coriander leaves and lemon juice to a form smooth paste
  3. Heat oil in a pan and splutter mustard seeds
  4. Add asafoetida, curry leaves and green chili and saute for few seconds
  5. Add onions and saute for 1-2 minutes
  6. Now add the potatoes, carrots and salt and mix well
  7. Cover and cook on medium flame till the vegetables are cooked
  8. Add green paste and saute for few minutes
  9. Add poha, fried peanuts, sugar and mix well
  10. Sprinkle little water and cook for 2-3 minutes
  11. Serve hot with chutney or sauce
