ABOUT Burghul Minestrone Soup with Pine Nuts RECIPE

This hearty soup is perfect comfort food for any season as well as for weight loss. Minestrone is a thick soup of Italian origin.The soup is a veritable sea of greens, vegetables and pasta. Here pasta has been replaced with burghul. This minestrone soup is loaded with proteins and minerals from burghul, greens and veggies whatever is in season and available locally.

Ingredients Serving: 4

  1. FOR STOCK
  2. Bottle gourd 100 gram peeled and chopped
  3. Spinach leaves 1/4 cup
  4. Tomato 1 small chopped
  5. FOR MINESTRONE
  6. Burghul 1/8 cup
  7. Garlic 4 cloves slivered
  8. Onion chopped 1/4 cup
  9. Short green beans cut 1/2 cup
  10. Fresh Green Peas 1/2 cup
  11. Carrot small cubes 1/4 cup
  12. Green capsicum chopped 1/4 cup
  13. Spring onions chopped 2 teaspoons
  14. Potato 1 small chopped
  15. Salt to taste
  16. Black pepper to taste
  17. 1 tsp oregano
  18. Zest of one lime
  19. 2 tbsp Crushed pine nuts for topping
  20. 2 tsp Olive oil

Instructions

  1. For the stock, Cook bottle gourd, spinach and tomato in a pan with 4 cups of water .
  2. Mash and strain for stock and keep it aside.
  3. FOR MINESTRONE
  4. Heat olive oil in a pan, saute garlic until aromatic
  5. Add the chopped onions and saute for a minute
  6. Add and saute burghul for a minute
  7. Now add carrot, potato, beans and peas. Saute them for a minute.
  8. Add capsicum and spring onions with the stock and mix well
  9. Add oregano , zest and salt. Simmer the soup over medium heat for 10 minutes
  10. Add pepper and check for seasoning
  11. Garnish with Pine nuts and serve warm
