This is a very healthy recipe serve as a side dish.My mother and mother in law had cooked this dish.I still remember the taste.

Ingredients Serving: 4

  1. Poi Saag finely chopped - 2 cup
  2. 1 medium sized potato
  3. Groundnuts 1/4 cup
  4. turmeric powder 1/4 tsp
  5. mustard seeds 1/2 tsp
  6. Dry red chili 3
  7. Jaggery/sugar 1/2 tsp optional
  8. Oil 1 tbsp
  9. Salt to taste

Instructions

  1. Wash peel and cut the potato into very small pieces.Grind the peanut into a fine paste. Keep it aside
  2. In a pan heat oil. Add crushed dry red chilies and mustard seed.When it crackles, add potato pieces and turmeric powder .Fry for 2 minutes.
  3. Add chopped poi saag and salt.Mix well. Cover and cook over medium flame until half cooked
  4. Add peanut paste and Jaggery .Mix it well.Cook till all the water evaporates and the potato pieces are soft.Switch off. Serve hot
