ABOUT Salmon Green Salad with Green Dressing RECIPE

I can't advocate this crunchy, low-fat & healthy salad enough! Delicious pan-fried Salmon fillets, a tempting 'Green-goddess' dressing and an assortment of many seasonal veggies come together in this bewitchingly colorful salad that is perfect to prepare as your everyday meal option, for picnic afternoons with colleagues as well as fancy dinner parties with family and friends! Including more of fish in your diet only has advantages.

Ingredients Serving: 2

  1. For the Green Goddess dressing:
  2. 1 ripe avocado flesh
  3. 1 tbsp chives, chopped
  4. 1 tbsp spring-onion greens, washed and chopped
  5. 1 tbsp basil leaves, washed and chopped
  6. 1 tbsp parsley leaves, washed and chopped
  7. 1/4 cup Extra-virgin Olive oil
  8. 3 tbsp lime-juice
  9. 2 cloves Garlic, peeled and grated
  10. 2 tbsp non-fat Greek yogurt
  11. 2 tbsp red wine vinegar (optional)
  12. Salt to taste
  13. For the salad:
  14. 2 fillets of fresh Salmon, de-boned
  15. 1 cup spinach leaves, washed
  16. 1/2 cup rocket leaves, washed
  17. 5-6 cherry tomatoes
  18. 3 tbsp chopped cucumber
  19. 3 tbsp steamed broccoli
  20. 1/2 cup chopped lettuce
  21. 1 Jalapeno pepper, chopped (optional)
  22. 7-8 slices of Kiwi fruit (optional)
  23. 2 tbsp Bacon shavings (optional)
  24. 3 tbsp parmesan cheese shavings
  25. 1/4 cup Croutons of your choice
  26. 1 lime wedge
  27. 1 tsp olive oil
  28. Salt and Pepper to taste
  29. Marinade for salmon:
  30. 2 tbsp extra-virgin olive oil
  31. 2 tbsp fresh lime juice
  32. 1/2 tsp paprika powder/red chilly powder
  33. Salt and Pepper to taste

Instructions

  1. In a bowl, combine all the mentioned ingredients under the marinade list and mix well. Rub the mixture on salmon fillets. Rest for 10 minutes
  2. In a food processor, blend all the mentioned ingredients under the dressing category to form smooth puree. Keep it aside
  3. In a large salad bowl, combine all the veggies, fruit and herbs under the salad section except for the lime wedge. Mix well.
  4. Add croutons, bacon shavings, Parmesan shavings and a drizzle of extra-virgin olive oil to salad. Mix well
  5. Pan fry or grill marinated Salmon fillets until crispy and well-done. Carefully place on the top of mixed salad.
  6. Squeeze juice of lemon wedge .Season with Salt and pepper. Serve immediately
