ABOUT Rohu Macha Kaliya RECIPE

The role of rohu is also considered a delicacy in odisha, West Bengal, Bhojpur and Andhra Pradesh and among Odiya's ,Bengalis and Nepalis. It is deep fried and served hot as an appetizer as part of a Odisha , Bengali and Bihari,meal. Rohu is also served deep fried in mustard oil, as kaliya, which is a rich gravy made of a concoction of spices and deeply browned onions.

Ingredients Serving: 4

  1. Rohu fried Fish (Curry Cut)- 8 pieces
  2. Potatoes - 2 Medium sized chopped in slices(optional)
  3. 4 Medium Onion - finely sliced
  4. 1 Medium Tomato fine sliced
  5. 1 bay leaf
  6. 1 inch cinnamon (crushed)
  7. 4 cardamom (crushed)
  8. 1/4 cup Mustard oil
  9. 1 tbsp Kashmir chili powder
  10. 1/2 tsp turmeric powder
  11. 1/2 tsp sugar
  12. 1 tbsp freshly chopped coriander leaves
  13. 11/2 cup water
  14. Salt to taste
  15. For Masala
  16. 2 Medium onions(roughly chopped)
  17. Garlic 8-10 cloves
  18. Coriander seeds 1 tsp
  19. Cumin Seeds 1 tsp
  20. 2 Dry red chili
  21. 1 Green chili
  22. 1 small Bay Leaf
  23. Ginger 1 inch chopped

Instructions

  1. Heat oil in a pan and add sugar and caramelize it
  2. Add crushed cinnamon, cardamom and bay leaf, saute it for a minute
  3. Add sliced onions,and saute till it turns golden brown
  4. Now add in tomatoes and cook till the tomatoes turn mushy.
  5. Add turmeric and chili powder,saute it for a few seconds
  6. Add in remaining masalas, Roast until raw smell goes away
  7. Add fried potatoes and mix well
  8. Add water and bring to boil, cover and simmer till oil floats on top.
  9. Ad in fried fish and cook for 10 mins.Garnish it with chopped coriander leaves. Serve hot
