Flavorful briyani made with fresh methi leaves and paneer and a delicious mix of spices.

Ingredients Serving: 4

  1. Fresh methi leaves - 1 cup
  2. Paneer cubes -100 gm
  3. Basmati rice - 300 gm
  4. Oil - 4 tbsp+ ghee 2 tsp
  5. Big onion - 1 thinly sliced
  6. Ginger Garlic paste -2 tsp
  7. Garam Masala -1/4 tsp
  8. Chopped coriander and mint leaves - 1/4 cup each
  9. Green chili slit -4
  10. Yogurt - half cup
  11. Saffron - 1/4 tsp
  12. Salt - to taste

Instructions

  1. Rinse the rice and soak for 20 minutes. Drain excess water, keep it aside
  2. Clean methi leaves and keep it aside.Add Paneer cubes in chilled water.
  3. Heat oil in heavy bottomed vessel ,saute onion to golden brown,add ginger garlic paste.saute until raw aroma disappears
  4. Add chopped coriander mint leaves,green chili,stir again , add garam masala. Mix well
  5. Add yogurt and mix well.
  6. Add fresh methi leaves and saute for a minute. Add paneer cubes and salt , mix well.
  7. Meanwhile cook the soaked rice with enough salt and water, drain and keep aside.
  8. Spread the cooked rice over the methi paneer mix in the briyani vessel.
  9. Mix saffron in 1/4 cup hot milk or water.sprinkle over the rice.Add 2 tsp ghee.Close tightly with lid.
  10. Cook over low heat for 7 -10 minutes.switch off. Rest for 10 minutes
  11. Mix gently and serve hot with pappads ,chips or curry
