Ingredients Serving: 4

  1. Eggs 3
  2. Sugar 5 tablespoons
  3. Cake Flour 4 tablespoons
  4. Matcha powder 1 tablespoon
  5. Whipped cream 250grams
  6. Cranberries 1 tablespoon
  7. Walnuts 2 tablespoons

Instructions

  1. In a mixing bowl , blend eggs ,sugar and matcha powder until light and fluffy
  2. Preheat oven to 180 deg
  3. Sift cake flour in to the egg mixture and fold gently
  4. Line baking tray with parchment paper. Pour the batter and spread evenly
  5. Tap the tray 2-3 times to avoid air bubbles
  6. Bake for 12 minutes. Check with tooth pick, it should come out clean
  7. Cool the cake completely
  8. For Filling: Blend heavy cream and 1 tbsp sugar until fluffy
  9. Spread whipped cream evenly over cake and sprinkle cranberries and walnuts on top
  10. Fold it as tight roll and refrigerate for about 1 hr
  11. Slice and serve
