Fried brinjal in thick aromatic gravy.

Ingredients Serving: 4

  1. 1 large size brinjal
  2. 2 medium sized onion
  3. 1 big tomato
  4. 4 green chilies
  5. 1/2 teaspoon turmeric powder
  6. 1/4 teaspoon cinnamon powder
  7. 1/4 teaspoon cardamom powder
  8. 1/4 teaspoon sugar
  9. 8 tablespoon mustard oil
  10. Salt to taste

Instructions

  1. Grind onions, tomatoes and chilies to smooth paste
  2. Heat oil in a pan, apply half of sugar salt and turmeric powder to the sliced brinjals and deep fry.
  3. Fry till golden brown and keep them aside
  4. In the remaining oil add ground paste and mix well
  5. Add salt turmeric powder and sugar .Saute well until oil separates
  6. Add water and mix well
  7. Sprinkle cardamom and cinnamon powder. Mix well. Cook until gravy thickens
  8. Pour gravy over the fried brinjals and gently mix
  9. Garnish with finely chopped coriander leaves.
  10. Serve hot
