ABOUT Sarso da Saag RECIPE

Sarso da saag is popular dish from Punjab. This is usually served with Makki di roti (maize bread). Sarso da saag is prepared from a combination of Mustard leaves and Spinach leaves. Before serving it's topped with homemade white butter or pure ghee. To complete the patter, along with sarso da saan and makki di roti, a piece of jaggery, Green chillies and pickle of radish is served. Being Punjabi, no matter where I stay, I often cook Sarso da saag for my family every winter.

Ingredients Serving: 5

  1. Mustard Greens 500 gm
  2. Spinach 250 gm
  3. Carrot 100 gm
  4. Desi Ghee 4 tbsp
  5. Finely chopped onions 1/2 cup
  6. Finely chopped Tomatoes 1/2 cup
  7. Green chilies 4
  8. Ginger 2 inch
  9. Salt 1 tbsp
  10. Red chili powder 1 tbsp
  11. White butter 5 tbsp
  12. Maize flour 1 tbsp

Instructions

  1. Clean and wash mustard greens, spinach and carrot and chop
  2. Add chopped veggies in a pressure cooker with green chilies and ginger.
  3. Pressure cook vegetables for 2 whistle.
  4. Allow cooked veggies to cool
  5. Add veggies to mixture grinder with 1 tbsp of maize flour.
  6. Blend the mixture to smooth puree.
  7. Ina pan, heat pure desi ghee. Add chopped onions and saute for 5 minutes. Add chopped tomatoes and red chili powder. Mix well and cook for another 5 minutes.
  8. Add prepared puree to the tempering. Add salt and mix well. Cover and cook over medium heat for 10 minutes
  9. Serve hot with dollop of white butter and makki di roti.

I don't like the taste of ghee. So, can I use butter?
