Cutlet made with Amaranth leaves, carrot and Potato. Easy way to add greens to our kids food

Ingredients Serving: 2

  1. amaranth leaves 1/2 cup
  2. potato 2 medium sized
  3. carrot 2 small size, chopped
  4. cashews 1/4 cup
  5. Red chili powder 1/2 tsp
  6. salt 1/2 tsp
  7. hing pinch
  8. Garam masala 1/2 tsp
  9. coriander leaves 3 tbsp, chopped
  10. Poha powder (1/2 cup Poha grinded)
  11. besan 1 cup
  12. 1/2 cup breadcrumbs


  1. Pressure Cook Veggies, until tender
  2. Rinse and cut Amaranth leaves
  3. Add boiled Potato and Carrot to Amaranth leaves. Mash veggies and leaves and mix well
  4. Add salt, hing and red chili powder. Mix well
  5. Add Poha powder , cashews and garam masala powder.
  6. Add finely chopped coriander leaves. Mix well to form soft dough
  7. Divide into equal portions and shape like cutlets
  8. Add water to besan to form smooth thick paste. Dip cutlets into besan paste and coat well
  9. Roll the cutlets over Poha powder / Bread crumbs.
  10. Shallow fry cutlets on hot tawa over low flame until golden brown on both sides
  11. Serve hot with Sauce.
