Ingredients Serving: 4

  1. 2 cups wheat flour
  2. 3/4 cup grated radish
  3. 1/2 cup chopped radish leaves
  4. 1/2 cup chopped spinach
  5. 1/2 cup chopped coriander leaves
  6. 2 green chilies chopped
  7. 1/2 tsp asafoetida
  8. salt to taste
  9. 1/2 tsp dry mango powder
  10. 1/2 tsp carom seeds
  11. 2 tbsp oil + 1 tsp oil for kneading the dough
  12. water as required
  13. oil for shallow frying

Instructions

  1. Add all the ingredients except oil in a bowl and mix. Add 2 tbsp oil and knead for 5 minutes to form smooth dough
  2. Add 1 tsp oil and knead for 2-3 minutes. Rest dough for 15 minutes
  3. Divide dough into lemon sized balls
  4. Coat dough with little flour and roll into paratha.
  5. Apply little oil and flour on top of it
  6. Fold the paratha in half and apply some more oil and sprinkle with flour
  7. Fold into triangle shape and roll into a paratha maintaining the shape
  8. Heat tawa over medium heat and place paratha on it
  9. Cook on one side for few seconds then flip it over
  10. Apply oil on top and over the edges. Cook on both sides till golden brown
  11. Serve hot with raita or pickle
