ABOUT Broccoli Cheddar Soup RECIPE

This broccoli cheddar soup is filling, comforting and so delicious. It's creamy and cheesy made with lots of fresh broccoli and carrots.

Ingredients Serving: 3

  1. Broccoli florets (small) – 2 Cups
  2. butter – 3 tbsp
  3. Grated carrot – 4 tbsp
  4. onion – 1 ,chopped
  5. Vegetable broth – 11/2 Cup
  6. salt – to taste
  7. garlic Powder – 1/4 tsp
  8. All purpose flour – 2 tbsp
  9. Milk – 1 cup
  10. Cheddar Cheese – 1 Cup ,grated
  11. Freshly ground black pepper, to taste


  1. In a large vessel , melt 2 tbsp butter over medium heat.
  2. Add onions and saute until tender.
  3. Add carrots and cook for 4-5 minutes. Stir in broccoli, vegetable broth, salt and garlic powder.
  4. Bring the mixture to a boil, then reduce the heat to a simmer.
  5. In a medium saucepan, melt remaining butter. Add the flour and cook for 1-2 minutes until golden brown, whisking constantly.
  6. Whisk in the milk and cook until mixture thickens and bubbles. Once the mixture has thickened, whisk in the cheese until completely melted.
  7. Remove from heat and add the cheese sauce to the soup pot. Mix well
  8. Allow to simmer until warmed through and broccoli is tender. Season with salt and freshly ground pepper to taste
  9. Transfer the soup into a serving bowl and add some grated cheese on top. Serve hot with bread.
