ABOUT Spinach Cupcakes with Mint Chocolate Frosting RECIPE

Winter is the time to enjoy veggies. One of the most healthy vege among them is spinach. But it is very difficult to make kids to have spinach. Kids love dessert specially cakes. So thought of making a cake with spinach. So made these cupcakes. Kids will love to have them because it has not very distinctive taste of spinach but the nutritional value of spinach remains intact.

Ingredients Serving: 4

  1. All purpose flour 200 gm
  2. Powdered Sugar 150 gm
  3. Oil 150 ml
  4. Milk 150 ml
  5. Spinach puree 1/2 cup
  6. Eggs 2
  7. Vinegar 1/2 teaspoon
  8. Baking soda 1/4 teaspoon
  9. Baking powder 11/2 teaspoon
  10. Butterscotch essence 1 teaspoon
  11. FOR GANACHE:
  12. White chocolate chopped 1/2 cup
  13. Whipping cream 1/2 cup
  14. Mint leaves 4
  15. Green food color 1 drop
  16. Sprinkles to decorate - as required

Instructions

  1. Preheat oven 180 deg C for 15 minutes.
  2. Separate egg whites and yolks. Beat egg white until stiff peaks form. Keep it aside.
  3. In a separate bowl , blend egg yolks , oil and sugar until well combined.
  4. Sieve all purpose flour, baking soda, and baking powder 2-3 times. Now add the dry mixture to wet ingredients in two batches.
  5. Add the spinach puree, milk and essence. Cut and fold the batter gently until just combined
  6. Gradually add whipped egg whites and fold in gently until well combined.
  7. Pour the batter upto 2/3 level in muffin tins and bake for 20 minutes until done. Allow the cupcakes to cool completely
  8. FOR GANACHE: Boil the whipping cream with mint leaves. Sieve the cream and add chopped chocolate. Stir continuously and melt chocolate completely.
  9. Add a drop of green food color to it and stir well. Pour ganache on cooled cupcakes. Decorate with sprinkles and serve.
