ABOUT Paan Delight RECIPE

This dessert is inspired by a very loved Indian dessert named Balushaahi. I tweaked the recipe and the traditional shape by infusing another most loved Paan (betel leaf) and invented this Paan Delight.

Ingredients Serving: 4

  1. For Paan Dough
  2. All purpose flour 250 grams
  3. Butter 65 grams
  4. Warm Water 75 ml
  5. Betel leaves 6
  6. Sugar 1 tablespoon
  7. Yeast 1/2 teaspoon
  8. Baking Soda 1/8 teaspoon
  9. Thick Curd 1/2 tablespoon
  10. For Paan Sugar Syrup
  11. Sugar 2 cups
  12. Water 1 cup
  13. Paan leaf paste 1 teaspoon
  14. Dry rose petals 1 teaspoon
  15. Few strands of Saffron

Instructions

  1. Wash the betel leaves thoroughly and chop roughly. Grind it to a paste by adding 3 teaspoons of water. Squeeze the paste a little Use the liquid as paan extract.
  2. Mix together flour, yeast, sugar, butter, baking soda well.Add Curd, 2 tsp Paan paste, 1 tsp Paan extract , water.
  3. Mix and knead a soft dough. Place dough in a greased bowl covered with a damp cloth
  4. Rest aside for 45 minutes in a warm place.
  5. Deflate dough gently. Dust surface with flour and roll dough into rectangular shape
  6. Using Flower cutter, cut shapes of flower from dough
  7. Shape 5-6 flowers and place them on over another.
  8. Press pistachios in the middle so that all the layers will join together.
  9. For Paan Sugar Syrup
  10. In a pan , mix sugar and water well. Simmer and cook until 1 string consistency is achieved
  11. Add in Paan paste, saffron and dry rose petals.
  12. Bring to boil and switch off
  13. Heat oil for frying and once hot, lower the heat
  14. Add the shaped flower one at a time.
  15. Cook over low heat until petals are golden brown
  16. Drain excess oil over kitchen towel
  17. Immediately dip it in prepared sugar syrup.
  18. Let it sit for 2-3 minutes.
  19. Remove excess syrup and place flowers on a serving platter.
  20. Garnish with dry rose petals or as desired. Serve
