Beet Chocolate Cake (Wholegrain and Butter free)

ABOUT Beet Chocolate Cake (Wholegrain and Butter free) RECIPE

If you are an avid beet lover, then this cake is a must try. It is a mildly sweet choco chip studded beet cake with a lovely colour and flavour.

Ingredients Serving: 6

  1. 1 cup whole wheat flour (atta)
  2. 1 cup all-purpose flour
  3. 3 eggs
  4. ¾ cup canola oil (any neutral oil will do)
  5. ¾ cup buttermilk
  6. 2 medium size beets
  7. ½ cup sugar (powdered)
  8. 2 tablespoons honey
  9. 1 1/2 teaspoon baking powder
  10. ½ teaspoon salt
  11. ½ cup chocolate chips
  12. 1 teaspoon vanilla essence

Instructions

  1. Grease and line a 9 inch cake tin. Preheat the oven to 180 degrees Celsius.
  2. Pressure cook the beet till it is just tender. Then peel and puree it in a blender.
  3. Add honey, buttermilk, eggs, oil and vanilla essence and blend till its smooth. Transfer this to a large bowl and add in sugar.
  4. Sieve together the whole wheat flour, all-purpose flour, baking powder and salt. Fold the dry ingredients into the wet till it is well combined and smooth. Then fold in the chocolate chips.
  5. Transfer this batter into the cake tin. Bake for 40 to 45 minutes or till the cake shrinks from the sides and a skewer inserted in the center comes out clean. Remove from the pan and transfer to the rack to cool.
  6. Cut into even slices and serve it warm.
