ABOUT Achari Khandvi RECIPE

Tell you the truth, I love Khandvi, it's my favourite Gujju dish. It is quite complicated to make but once you get the hang of it, you can make it, no matter how spicy chili you add in the tadka but the basic taste is very bland. So when we are making everything achari why not turn this simple dish into a colorful one. That's what I did. I added pickled masala in it and voila yummy delicious khandvi is ready!

Ingredients Serving: 4

  1. 1/2 cup besan (chickpea flour)
  2. 1 cup sour buttermilk
  3. 1 tbsp aachar masala
  4. salt to taste
  5. For the Seasoning :
  6. 2 tsp oil
  7. 1 tsp white sesame seeds (til)
  8. 1/2 tsp mustard seeds
  9. 1 green chili - long sliced
  10. a few curry leaves
  11. 2 tsp grated coconut
  12. finely chopped coriander leaves

Instructions

  1. Take the besan, buttermilk (chas), achar masala, salt in a bowl. Mix these ingredients properly and make a smooth batter with the help of a hand blender.
  2. Prepare a large dish or counter top to spread this mixture.
  3. Pour this batter in a heavy bottomed pan and cook till it becomes thick, note to cook this on a low flame and try to avoid lumps.
  4. Once it's cooked and a nice thick paste is formed, you will have to work fast. Spread a spoonful of mixture on a greased dish or a counter top.
  5. When you're done spreading all of it, cut it in thin lengthwise. Then carefully roll each strip till the end and transfer all the rolls in a serving dish. To prepare it's tadka, heat the oil and add all the ingredients one by one.
  6. Pour this seasoning on top of the roll and sprinkle coconut and coriander leaves on top.
  7. Enjoy it as it is or with green chutney on the side. Your spicy masaledar achari khandvi is ready to be enjoyed!
