Ingredients Serving: 6

  1. Spinach leaves 160 gm
  2. Banana 1/2
  3. Sugar 1/2 cup
  4. Olive oil 1/4 cup
  5. Vanilla extract 1/2 tsp
  6. Lemon juice 1 tbsp
  7. 1 egg (or 1 tbsp flax seed meal + 3 tbsp water)
  8. All purpose flour 1 cup
  9. Baking powder 1 tsp
  10. Salt 1/4 tsp
  11. Topping: sweetened whipped cream 1 cup

Instructions

  1. In a bowl sift flour, baking powder and salt. Set aside.
  2. Mix flax seed meal and water. Keep aside.
  3. Puree spinach leaves to fine paste.
  4. In same mixer jar , add 1/2 banana, vanilla extract, lemon juice, sugar, oil and egg (or flax egg) and pulse few times.
  5. Pour the spinach mixture over the flour mixture and gently fold in, until just combined. Pour the batter into greased 8*2" baking pan.
  6. Bake in preheated oven at 180 C for 25-30 minutes.
  7. When cooled completely top with whipped cream.
