Ingredients to make Harabhara Baingan Bhartha

  • 1 big size Brinjal (about 300 grams)
  • 1/2 cup blanched spinach puree
  • 1/2 cup chopped onions
  • 1/2 cup Chopped tomatoes
  • 1/4 cup chopped coriander
  • 3 tablespoon chopped spring garlic
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon cumin coriander powder
  • 1 teaspoon kitchen king masala
  • 2 tablespoon oil
  • 1 tablespoon ghee
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon hing
  • 2 tablespoon ginger,chilly,garlic paste

How to make Harabhara Baingan Bhartha

  1. Roast the Brinjals on direct flame till soft, peel the skin
  2. Mash the brinjal well. Keep it aside
  3. Heat oil and ghee in a pan
  4. Splutter mustard seeds. Add hing and mix well
  5. Add ginger,chilly,garlic and saute for 2 minutes
  6. Add chopped onions and saute for 3-4 minutes
  7. Add tomatoes and spice powders. Mix well. Cook until tomatoes are tender
  8. Add roasted mashed brinjal and cook for 2 minutes
  9. Add salt, spinach puree, spring onion. Mix well. Cook for 3-4 minutes
  10. Serve warm
