Hyderabadi Dum Biryani

Ingredients to make Hyderabadi Dum Biryani

  • 2 cup cooked basmati rice
  • 2 cup blanched, chopped mix veg (carrot,potatoes,cauliflower,French beans)
  • 1/4 cup chopped cabbage
  • 1/4 cup chopped capsicum
  • 1 cup chopped onions
  • 1/4 cup fried onions
  • 1 teaspoon salt
  • 1 tablespoon biryani masala
  • 1 cup chopped coriander and mint leaves
  • 2 tablespoon ghee
  • 1 tablespoon oil
  • 1 bay leaf
  • 3 cloves
  • 1/4 cup cashews
  • 2 cardamom
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon hing
  • 1 cup blanched spinach puree
  • 1 coal piece for dum

How to make Hyderabadi Dum Biryani

  1. Heat oil and ghee in a pan. Add cashews, hing, cumin seeds,cloves,cardamon ,bay leaf , onions and cook for 2 min.
  2. Now add capsicum and cabbage. Cook for a minute
  3. Add blanched mix veg,salt and mix well
  4. Add biryani masala, spinach puree and mix well
  5. Add cooked rice and mix well
  6. Add fried onions,coriander,mint leaves
  7. Now heat the coal piece on direct flame till it turns reddish
  8. Place aluminum foil on top of biryani and add coal piece on it. Pour 1 teaspoon ghee, 1 clove,1 cardamon. Cover and cook for 10 minutes over low heat
  9. Gently stir and mix
  10. Serve warm with cucumber spinach raita
