Ingredients Serving: 4

  1. 100 gms spinach leaves cleaned and chopped
  2. 100 gms Pui shag, cleaned and chopped
  3. 200 gms red pumpkin, cubed
  4. 150 gms shrimps
  5. 1 small brinjal , cubed
  6. 1 medium potato , cubed
  7. 2 green chilies Slit
  8. 1 tbsp dry spices - turmeric, coriander and paanch phoron(1/3 tsp of cumin,nigella,mustard,fennel and fenugreek seeds each)
  9. 2 tbsp mustard oil
  10. 1 tbsp sugar
  11. 2 dry red chilies
  12. 2 large Bay leaves
  13. Salt to taste

Instructions

  1. Marinate prawns with 1/2 tsp salt and turmeric powder. Keep it aside
  2. Heat oil in a wok/ non stick pan and shallow fry the shrimps till slightly golden in color. Keep it aside.
  3. In the same pan, add another tsp of oil and toss the Bay leaves, dry red chilies and paanch phoron mix and saute for a minute on medium heat.
  4. Add potatoes and the stems of pui danta and cook covered for 5 minutes
  5. Add the remaining veggies,dry spices and salt. Mix well.Cover and cook for 3-5 minutes
  6. Now add the greens and green chilies and mix well . Cover and cook till veggies become tender
  7. Add shrimps ,sugar and mix well
  8. Serve warm with hot ghee rice
