ABOUT Soya Mint Rice RECIPE

Soya chunks and mint are a pefect combination and is very healthy too.

Ingredients Serving: 6

  1. Basmati rice - 4 cups
  2. Water- 6 cups
  3. Mint- 2 bunches
  4. Tomatoes-2
  5. Onion-2 , thinly sliced
  6. Green chilies-4
  7. Potato-1, cubed
  8. Soya chunks-1 cup
  9. Ginger-1 inch piece
  10. Garlic-10 cloves, minced
  11. Oil-1 tbsp
  12. Ghee-1 tbsp
  13. Garam masala spices- 1 tbsp
  14. Salt-to taste
  15. Turmeric powder- 1/4 tsp
  16. Chili powder- 2 tsp
  17. Coriander powder- 1 tsp

Instructions

  1. Boil water with little salt, switch off. Add soya chunks and rest for 20 minutes.Drain excess water and squeeze soya chunks twice. Keep it aside
  2. Soak basmati rice in 6 cups water in automatic rice cooker. Blend mint leaves, tomatoes, ginger, garlic, salt, chili powder, turmeric powder, coriander powder to a smooth paste.
  3. Heat oil and ghee in a non stick pan, add garam masala spices and onion slices. Saute until onions are translucent
  4. Now add ginger garlic paste , potato , soya chunks and saute for 4-5 minutes.
  5. Add ground paste and saute for 10 min.
  6. Transfer this gravy to the soaked basmati rice and switch on the cooker to cooking mode.
  7. When the mode turns to' keep warm' mode, transfer to serving plate. Serve hot with cucumber raita.
