ABOUT Quick Aaloo Palak Subji RECIPE

Potato and spinach both have unique taste which makes this subji or curry perfect side dish. It is healthy and quick option and require not more then 10-12 minutes for cooking.

Ingredients Serving: 4

  1. Spinach finely chopped – 1.5 cups
  2. Potato – 1 small, cubed
  3. Medium Onion – 1/2 , finely chopped
  4. Tomato finely chopped – 1
  5. Mustard seeds – 1/2 tsp
  6. Cumin seeds – 1/2 tsp
  7. Garlic minced – 1 tsp
  8. Green chili slit – 1/2
  9. Red chili powder – 1 tsp
  10. Garam masala – 1 tsp
  11. Asafoetida – 1/4 tsp
  12. Turmeric – 1 tsp
  13. Coriander powder – 1 tsp
  14. Grated coconut – 1 tbsp (optional)
  15. salt as per taste
  16. Oil – 2 tbsp

Instructions

  1. Heat oil in a non-stick pan. Splutter cumin and mustard seeds
  2. Add minced garlic and slit green chili. Cook till raw aroma goes away.
  3. Now add finely chopped onion and salt. Cook till translucent.
  4. Add asafoetida, Turmeric, coriander powder, red chili powder, garam masala. Mix well and cook for 1 minute.
  5. Add finely chopped tomatoes. Mix well and cook on low flame till tomatoes become mushy and soft.
  6. Add potatoes. Coat well with masala. Add 2-3 tbsp water. Cover with plate, add water over a plate and cook for 5 minutes. Keep stirring in between.
  7. Once potato lightly softens, add chopped spinach. Mix, cover and cook till spinach and potato cooks completely.
  8. Remove plate, let all water evaporate. Add grated coconut. Mix well.
  9. Serve hot with chapati, naan or dal rice.
