ABOUT Ivy Gourd Fry RECIPE

Ivy gourd contains beta-carotene, a major Vitamin A source, Vitamin C and lowers the blood sugar level. A simple yet appetising recipe with the this green vegetable to relish the meal.

Ingredients Serving: 3

  1. 250 gms Ivy gourd
  2. 2 Onions Sliced
  3. 1 tsp Ginger garlic paste
  4. 1 tsp Coriander powder
  5. 3/4 tsp chili powder
  6. 1/2 tsp turmeric powder
  7. 2 tbsp grated coconut
  8. 1 Tbsp Peanuts
  9. 1/2 tsp sesame seeds
  10. 1/2 tsp cumin seeds
  11. 1/2 tsp mustard seeds
  12. 1/2 tsp Urad dal
  13. 1 tsp oil
  14. 1 sprig curry leaves

Instructions

  1. Wash and chop off the ends of the Ivy gourds. Steam the ivy gourds for 4 minutes.
  2. Dry roast peanuts and remove from the pan, next add sesame seeds, when it sputters remove from heat. At the last roast the grated coconut lightly.
  3. Allow the roasted ingredients to cool down and grind it into a fine paste by adding enough water.
  4. Now cut the steamed Ivy gourds into roundels
  5. In a heavy bottom pan heat the oil. Add mustard seeds, when it starts to splutter add urad dal, cumin seeds and curry leaves.
  6. Next add onions and saute till it turns translucent.
  7. Add ginger garlic paste , saute till raw aroma disappears
  8. Now add spice powders and mix well. Add in ivy gourd and mix
  9. Add 1/2 cup water and salt. Cover and cook for 5 minutes stirring in between
  10. Add ground paste and mix well
  11. Remove from heat and serve hot with rice or chapati.
