ABOUT Spinach Quesadilla RECIPE

Quesadilla is a Mexican Dish.This dish is very famous in Indians staying overseas as its taste is very similar with our Indian pizza.I made these quesadilla with a twist.For a dough I used spinach leaves to make it more healthy and nutrious.

Ingredients Serving: 6

  1. Whole Wheat Flour 1 cup
  2. All purpose flour 1 cup
  3. Rice flour 2 tbsp
  4. Very Finely Chopped Spinach Leaves 1 cup
  5. Salt 1 tsp
  6. Oregano 1 tsp
  7. Water as required for kneading
  8. For filling :
  9. Finely sliced - 3 medium size onion
  10. Finely sliced Carrot 1 medium size
  11. Broccoli Florets 1 medium size
  12. Finely sliced Green Capsicum 1 medium size
  13. Finely Chopped Cabbage 1/2 cup
  14. Sweet Corn 1/4 cup
  15. Salt to Taste
  16. Oregano 1 tsp
  17. Chili Flakes 1 tsp
  18. Tomato ketchup 2 tbsp
  19. Veg Mayonnaise 2 tbsp
  20. Mozzarella Cheese/Pizza Cheese 1/2 cup - adjust
  21. Oil 1 tbsp (for making filling)
  22. Oil to drizzle - for making tortillas

Instructions

  1. In a bowl add all flours,salt,oregano,spinach, adequate water.Knead well to form soft dough. Keep it aside
  2. Heat oil in a non stick pan.Add oregano,chili flakes.Mix and immediately add all veggies and stir fry at high flame.
  3. When vegetables starts releasing water ,salt. Mix well and keep on stirring.When all veggies are cooked. Switch off
  4. Now add ketchup and mayonnaise and mix it well.
  5. Divide dough into equal portions. Roll each portion into very thin chapatis. Add prepared filling and sprinkle gratef cheese over it.
  6. Fold the chapati from one side to make half circle.Press it firmly and pan fry from both sides until golden brown and crisp. Drizzle on top and edges. Using pizza cutter, slice and serve

You can have it with green chutney or sauce.
