About Mushroom Soup Recipe

Recipe for the soup is mine, but has been inspired by Chef Sanjeev Kapoor's recipe. This is a healthy soup, with just a hint of cream, unlike the soup full of cream you get in restaurants.

Mushroom Soup

Ingredients to make Mushroom Soup

  • garlic cloves, chopped finely - 5
  • spring onions, chopped finely - 2
  • Button mushrooms - 2 packets, chopped finely
  • Amul fresh cream - 2 tbsp
  • Milk - 1 cup
  • water to get the desired consistency
  • Salt and pepper to taste
  • olive oil - 2 tbsp

How to make Mushroom Soup

  1. Heat oil in a pan. Add garlic and saute for about a minute till it gets brown.
  2. Add onions and saute till translucent.
  3. Add chopped mushrooms and saute on medium heat till the water evaporates and mushrooms are cooked.
  4. Scoop out some of the mixture and keep it aside for garnishing. Put the rest of the mixture in a blender and blend into a fine paste by adding a little water/milk.
  5. Pour the paste back in the pan and add milk and water to get the required consistency of the soup.
  6. Add salt and pepper to taste.
  7. At the time of serving, add the cream in the soup and bring the soup to a boil.
  8. In a bowl, pour hot soup and put a little bit of filling we had kept aside earlier for the crunch. Garnish with cream and croutons and serve hot..

My Tip:

You can add a teaspoon or two of Knorr Cream of Mushroom soup in the pan while boiling the soup.
