ABOUT Mirch Pakoras RECIPE

Mirchi vada is a rajasthani delicacy. Green chilli poppers stuffed with masala potato, coated with thick gram flour batter. These chilli poppers/bhavnagri chillies are large mild chillies.

Ingredients Serving: 4

  1. Bhavnagari chilies 4
  2. Boiled potatoes 2
  3. oil 1 tbsp + additional for deep frying
  4. Curry leaves 1 sprig
  5. Mustard seeds 1/4 tsp
  6. salt 1/2 tsp
  7. Red chili powder 1/4 tsp
  8. turmeric powder 1/4 tsp
  9. coriander powder 1/2 tsp
  10. Green coriander leaves 1 tbsp
  11. For batter
  12. Gram flour 3/4 cup
  13. salt 1/2 tsp
  14. Red chili powder 1/2 tsp
  15. coriander powder 1/2 tsp
  16. Garam masala 1/2 tsp
  17. water as required

Instructions

  1. Mix all ingredients of batter and form a thick batter.
  2. Wash and slit green chilies.Remove seeds.
  3. Mix red chili powder, turmeric powder and coriander powder in 1 tbsp water. Keep it aside
  4. Heat oil in a wok and splutter mustard seeds. Add curry leaves and saute for 2-3 seconds
  5. Add dissolved spice paste and saute till oil separates.
  6. Add mashed potatoes and mix well
  7. Sprinkle salt and mix well. Switch off
  8. Add fresh coriander leaves and mix well
  9. Stuff potato mixture in green chilies.
  10. Dust stuffed chilies with little dry gram flour. This helps to hold batter.
  11. Dip chilies in prepared batter.
  12. Drop chilies in hot oil and deep fry over medium heat till Chilies are golden brown and crisp.
  13. Drain excess oil over kitchen towel. Serve hot with sauce or chutney
