Hello friends! Try this easy to make n delicious italian recipe with the goodness of spinach. This semolina rivoli stuffed with lots of vegetables n cottage cheese is loved by people of all age groups.

Ingredients Serving: 4

  1. 1 cup semolina
  2. 1/2 cup spinach puree
  3. 1 tsp oil
  4. 1/2 tsp salt
  5. Water as required
  6. For stuffing
  7. 1/2 capsicum finely chopped
  8. 1/2 small cup cabbage finely chopped
  9. 1 carrot finely chopped
  10. 4 teaspoon boiled peas
  11. 20 gm cottage cheese, grated
  12. 5 to 6 Curry leaves
  13. 1/2 tsp mustard seeds
  14. 1/4 tsp Black salt
  15. 1/4 tsp black pepper powder
  16. 1/4 tsp Garam masala
  17. 1/4 tsp Chat masala
  18. 1/4 tsp Salt
  19. 1 tsp oil
  20. For tomato cream sauce..
  21. 2 large tomatoes, pureed
  22. 1 onion finely chopped
  23. 1/2 inch ginger , chopped
  24. 2 teaspoon tomato sauce
  25. 1/2 tsp oregano
  26. 1/2 tsp black pepper powder
  27. 1/2 tsp salt
  28. 1/2 tsp sugar
  29. 3 to 4 teaspoon cream
  30. 1 tsp oil

Instructions

  1. Add semolina in a bowl
  2. Now add salt and spinach puree and mix well
  3. Knead a soft dough adding adequate water. Rest dough for 30 minutes
  4. Heat 1 tsp oil in a wok. Splutter mustard seeds. Add curry leaves and mix for few seconds.
  5. Now add vegetables except peas and cook for 2 min.
  6. Add boiled , mashed peas with little water and mix well
  7. Cook vegetables until they are tender
  8. Add cottage cheese and spices. Mix it well. Allow mixture to cool
  9. Knead dough for 3-4 minutes. Divide dough into 12 equal portions
  10. Roll each portion into disc
  11. Trim discs into square shape.
  12. Add little stuffing on ravioli sheet
  13. Cover it with another ravioli sheet.
  14. Boil water in steamer, place butter paper on siever
  15. Place raviolis on it and cover it
  16. Simmer and steam for 10 to 15 min
  17. For tomato cream sauce
  18. Grind tomatoes with ginger to form smooth puree
  19. Heat 1 tsp oil in a pan. Add onions and saute until translucent
  20. Add tomato puree .Cook for 2 to 3 minutes over low medium flame.
  21. Add tomato sauce and mix well. Cook for 2 mins
  22. Add all spices and cook for 2 minutes
  23. Add cream in sauce. Mix it well. Switch off
  24. Serve Ravioli hot with Tomato cream sauce
