Ingredients Serving: 5

  1. Chicken - 600 gms
  2. Spinach | palak - 1 bunch
  3. Curd - 3 tbsp
  4. Onion - 1 , chopped
  5. Ginger green chili paste - 1 tsp
  6. Garlic paste - 2 tsp
  7. Salt as per taste
  8. Sugar - 1/2 tsp
  9. Turmeric powder- 1/2 tsp
  10. Chili powder- 1 tsp
  11. Coriander powder- 1 tsp
  12. Cumin powder- 1/2 tsp
  13. Bay leaves- 2
  14. Cinnamon - 1/2 inch stick
  15. Cardamom- 2-3
  16. Kasuri methi - 1 -2 tsp
  17. Fresh cream - 2-3 tbsp
  18. 3 tbsp oil

Instructions

  1. Roughly chop spinach, blanch it for 3-4 minutes. Once cooled, blend to form smooth puree. Keep it aside
  2. Heat 3 tbsp oil in a pan. Add bay leaves , cinnamon,cloves and cardamom. Saute until aromatic
  3. Add chopped onion, saute it till light brown.
  4. Now add ginger garlic and green chili paste, saute for 1 minute.
  5. Add chicken and stir for 2-3 mins over high heat
  6. Meanwhile in a bowl, add curd and all dry spices (except gararam masala) along with salt and sugar, whisk well
  7. Add curd mix into the pan, mix well
  8. Keep stirring it for few minutes until oil leaves side of the pan.
  9. Add 1/2 cup water, bring to boil, simmer,cover and cook until chicken is tender, stirring occasionally
  10. Add spinach puree and mix well. Cook spinach chicken uncovered for 5-6 mins.
  11. Then add garam masala, kasuri methi and cream, mix well
  12. Check for seasoning and cook until gravy reaches desired consistency.
  13. Serve hot with roti ,naan ,paratha or Rice..
