Ingredients Serving: 5

  1. 3/4 cup maida
  2. 1 cup milk
  3. Spinach puree 1/2 cup
  4. Salt -1/2 Tsp
  5. 1/4 tsp pepper
  6. 1/4 tsp baking powder
  7. For Filling
  8. 2 tsp oil
  9. 1/2 cup finely chopped onion
  10. 1 cup finely chopped mushroom
  11. 1/2 cup chopped french beans and capsicum
  12. 1/4 cup shredded cabbage
  13. 1/2 tsp chili and ginger paste
  14. 1 tsp garlic minced
  15. 1 cube cheese grated
  16. Salt 1/2 tsp
  17. Pepper 1/4 tsp
  18. For White Cheese sauce
  19. 2 tbsp Butter
  20. 2 tbsp maida
  21. 2 cups Milk
  22. Salt and Pepper as per taste
  23. 1 cube cheese grated
  24. 1 tbsp tomato ketchup
  25. 1 tsp red chili sauce
  26. 2 cubes of cheese grated

Instructions

  1. Sift maida, baking powder and salt in a bowl
  2. Add pepper and mix. Now add milk and whisk well to form batter of smooth pouring consistency
  3. Add Spinach puree, mix well and keep it aside for 10-15 min
  4. Heat a non stick pan. Add 1 tsp oil and a pinch salt.
  5. Spread the oil and salt and remove the pan from flame
  6. Pour 1/3 cup of batter in the pan, tilt the pan to make a thin pancake.
  7. Cook the pancake until it's edges turn brown
  8. Flip and Cook the other side for 1 -2 min. Similarly make rest of the pancakes until batter is completed
  9. For Filling: Heat oil in a pan. Add onions, ginger chilies and garlic.
  10. Saute well until onions are tender
  11. Add mushrooms, beans and capsicum, mix well
  12. Stir fry until capsicum is tender yet crunchy
  13. Add salt and pepper. Mix well.Switch off the flame and add cheese ,shredded cabbage. Mix well and keep it aside
  14. For the sauce: Heat butter in a thick pan.
  15. Add maida and saute until aromatic.Add milk in batches and stir well to avoid lumps
  16. Mix well till mixture coats back of the spoon. Add salt, pepper and cheese. Mix well until cheese melts
  17. Place pancakes on a plate
  18. Mix ketchup and chili sauce and spread evenly on the pancake
  19. Add 2 tbsp of filling on pancake in a row on the top
  20. Roll the pancake tightly and seal the edges with ketchup
  21. Cut the pancake rolls into 2. Trim the edges
  22. Preheat the oven to 200 degree Celsius for 10 min. Grease baking dish
  23. Pour white sauce reserving little in the baking dish and place wraps on top of the sauce
  24. Add remaining sauce on the wraps and sprinkle grated cheese on top
  25. Bake for 12-15 mins until cheese melts. Slice and serve
