ABOUT Spinach Roulade RECIPE

This healthful spinach Roulade contains an Asian style filling of sautéed broccoli, green peas, capsicum and corn.

Ingredients Serving: 6

  1. Spinach 1 bundle
  2. Broccoli 1 cup florets
  3. Capsicum 1, chopped
  4. Green peas 1/4 cup
  5. Spring onions 4, chopped
  6. Corn 1/4 cup
  7. Egg 3
  8. Milk 1/4 cup
  9. Oil 2 teaspoon
  10. tomato sauce 1 tablespoon
  11. Chili sauce 1 teaspoon
  12. Pepper 1/2 teaspoon
  13. Salt to taste

Instructions

  1. Add chopped spinach to boiling water with salt for 2 minutes. Drain excess water and keep it aside
  2. Separate egg yolks.
  3. Blend spinach, egg yolks and milk to smooth puree
  4. Beat egg white with little salt until stiff peaks form
  5. Gently fold in spinach mixture to the egg white.
  6. Mix until well combined
  7. Cover baking tray with aluminum foil leaving 2 inch overhang at each side. Spoon batter into the prepared tray and spread evenly
  8. Bake 10 minutes or until spinach mixture is set in preheated oven at 180 deg
  9. Lift foil with spinach mixture and place on a work surface. Run knife along sides of spinach mixture to release it from foil.Turn it upside down.
  10. Boil vegetable for five minutes and drain excess water.
  11. Heat oil in a pan . Add and saute spring onion and all boiled vegetables for 3 minutes. Reserve 1 tbsp veggies for garnish
  12. Add sauce in pan, mix well and saute for a minute. Filling is ready.
  13. Add mixture on the baked spinach towards one end leaving gap at the edges
  14. Tightly roll up spinach forming a log
  15. Cover the log with parchment paper and rest for 30 minutes
  16. To serve, use a long serrated knife to cut Roulade into six thick slices.
  17. Garnish with reserved veggies mixture.
