ABOUT Pasta Caponata RECIPE

A rich tomato based pasta that has the goodness of aubergine.

Ingredients Serving: 2

  1. 200 gms, penne pasta, cooked as per instructions on pack
  2. 2 white onions, cubed small
  3. 2 tomatoes, cubed small
  4. 3-4 cloves of garlic, minced
  5. 1/2 cup aubergine, cubed small
  6. 3-4 fresh basil leaves
  7. 4 tbsp tomato puree
  8. 1 tbsp ketchup
  9. 1/2 tsp chilli flakes
  10. 1 tsp mixed italian herbs
  11. 1/2 tsp pepper
  12. 2 tbsp olive oil
  13. salt to taste
  14. olives and grated parmesan for garnish

Instructions

  1. Warm the cooked pasta and keep it portioned in 2 bowls. Heat the olive oil in a pan, saute the garlic till fragrant, add the onions and saute till transparent, this could take 2-3 minutes.
  2. Add the aubergine and let it cook for a few minutes.
  3. Next, add the tomatoes, ketchup and tomato puree and fold it all together, let it simmer for a few minutes.
  4. Season with chilli flakes, pepper, Italian seasoning and salt. Cook for 3-4 minutes till the aubergine is soft and cooked through.
  5. Serve over the pasta, with a garnish of grated cheese and olive.
