Ingredients Serving: 2

  1. 2 medium sized brinjal, chopped
  2. Tender neem leaves 1/4 cup, chopped
  3. Urad dal 1 tsp
  4. Dry red chili 2-3
  5. Turmeric powder 1/4 tsp
  6. Mustard seeds 1/4 tsp
  7. Oil 1 tbsp
  8. Salt to taste

Instructions

  1. Heat oil in a pan. Add urad dal ,crushed dry red chilies and mustard seeds. Once mustard seeds splutter, add neem leaves and fry for 2- 3 minutes.
  2. Add brinjal , turmeric powder and salt.Mix well.
  3. Cover and cook for 3-4 minutes on high flame. Stir fry for 2-3 minutes over low heat. Serve hot
