ABOUT Kerala Styled Egg Pepper Roast RECIPE

A flavourful comfort food from a state which is a food paradise. This is my favourite egg curry dish. Try it and you will keep making it again !

Ingredients Serving: 2

  1. 2 hard boiled eggs
  2. 2 large onions chopped
  3. 1 tbspn ginger-garlic paste
  4. 2 green chillies finely chopped
  5. 1 tbspn fennel seeds
  6. 1 tbspn Black pepper powder
  7. 2 sprigs curry leaves
  8. 1 tbspn of dry spices like garam masala, Kashmiri red chilli powder, coriander powder
  9. 2 tomatoes chopped
  10. Salt to taste
  11. 3 tbspn edible Coconut oil
  12. 1/2 tbspn sugar

Instructions

  1. Heat oil over medium flame in a non stick pan/wok
  2. Add fennel seeds, ginger garlic paste and black pepper powder and sauté for 2 minutes.
  3. Throw in the onions, curry leaves, green chillies, salt. Mix well. Cover and cook till onions turns translucent.
  4. Add the tomatoes and dry spices and cook covered till tomatoes soften
  5. Add the boiled eggs and cook covered till the gravy has dry roasted(check in between so as to avoid burning/overcooking)Add someboiled water if needed
  6. Check the seasoning and adjust accordingly and bring the curry off the heat
  7. Serve hot with rice/chapatis/Nans/Kulchas, etc
