Ingredients Serving: 2

  1. For birista or fried onion
  2. 2 medium size onions
  3. Oil for deep fry
  4. For cooking biryani rice
  5. 1 cup basmati rice
  6. 4 to 5 cup water
  7. 1 tablespoon salt
  8. 1 small cinnamon
  9. 3 to 4 cloves
  10. 3 to 4 black pepper
  11. 2 bay leaf
  12. 3 to 4 green cardamom
  13. 1/2 tablespoon jeera or cumin seeds
  14. For paneer marination
  15. 150 grams paneer or cottage cheese
  16. 7 to 8 tablespoons hung Curd
  17. 1 tablespoon ginger paste
  18. 1 to 2 green chillies
  19. 1/4 tablespoon turmeric powder
  20. 1/4 tablespoon red chill power
  21. 1/4 tablespoon garam masala
  22. 1/4 tablespoon coriander powder
  23. 1/2 tablespoon lime juice
  24. Salt as per taste
  25. For layering
  26. 1 tablespoon oil
  27. 1 tablespoon ghee

Instructions

  1. Rinse basmati rice very well in water. Then soak the rice in water for 30 minutes.
  2. Slice 2 medium onion.
  3. Heat oil for deep fry onion. Fry the onions till they become golden. Once the onion become golden, then remove in kitchen paper.
  4. Whisk 7 tablespoons hung curd in a bowl. Add 1 tsp ginger paste, 1 tsp chopped green chillies, mix well. Now add all the spices turmeric powder, red chill power, coriander powder, garam masala, salt and lime juice. Mix again. Then add some fried onion and paneer cubes. Marinate for atleast 30 minutes.
  5. Meanwhile here our rice is soked after 30 minutes.drain the rice well and keep aside.
  6. Bring 5 cup of water to a rolling boil in a pot. Add whole spices cinnamon, bay leaf, cloves, green cardamom, cumin seeds and black pepper.
  7. Add 1 tsp salt.
  8. When the water start boiling add soked rice on high flame and do not cover the pan, cooked the rice without lowering the temperature. The rice have to be cooked till they 75% done. After that drain the rice and keep aside.
  9. Add the 2 tablespoons oil in ovan safe bowl.
  10. Add the marinated paneer.
  11. Make a rice layer now. Add all the rice.
  12. Add the fried rice.
  13. Add 1 tablespoon ghee.
  14. Cover with foil. Preheat the oven at 180 degree Celsius and cook for 18 to 20 minutes.
  15. Serve the Paneer biryani hot with any raita.
