Ingredients Serving: 4

  1. 200 gms cooked Long grain basmati rice
  2. A handful of sweet corn and chopped green peas boiled
  3. 2 tbspn heaped cumin seeds
  4. 1 tbspn ginger garlic paste
  5. Salt to taste
  6. 4 cardamom pods crushed
  7. 3-4 cloves
  8. 1 inch cinnamon stick
  9. 6-8 cashews
  10. 1 Bay leaf
  11. 2 dry red chillies broken
  12. 1 small onion chopped length wise
  13. 2 pieces of star anise
  14. 4 tbspn ghee
  15. 1 tbspn garam masala powder

Instructions

  1. In a small non stick pan heat a tbspn of ghee over medium heat
  2. Toss in the cashews and fry until brown and keep aside
  3. Next add the onions in the same pan and fry until caramelised and keep aside
  4. In a wok add the remaining ghee and let it heat
  5. Add the Bay leaves, cumin seeds, cinnamon, cardamom pods, star anise, ginger garlic paste, cloves and sauté for 2 minutes until you get a sweet aroma
  6. Next add the boiled peas and corn and mix well and sauté for another 5 minutes covered
  7. Now add the rice, salt and garam masala and cook covered after mixing well for 10 minutes
  8. Take off the heat and serve garnished with caramelised onions and cashews
