ABOUT Fenugreek Seeds Kheer RECIPE

Lot of recipes been prepared using Methi leaves and seeds. Fenugreek seeds have bitter taste and lots of healthy properties and used in medicine preparation as well. Seeds are used in dals, in dosas, in kheer, laddus, etc. These seeds are very good option for lactating mothers. It helps in increasing breast milk. Apart from this it helps in improving digestive problems, hair problems, cholesterol level etc. Fenugreek seeds kheer, laddus are quite popular in konkan and south region and they prepare it quite often. This is our traditional recipe.

Ingredients Serving: 4

  1. Rice – ½ cup (Soaked overnight)
  2. Fenugreek / Methi seeds – 3 1/2 tbsp. (soaked overnight)
  3. Grated Jaggery – 4 -5 tbsp
  4. Nutmeg powder – ½ tsp
  5. Cardamom powder – 1tsp
  6. Blended fresh coconut – 2tbsp
  7. Coconut Milk – 3/4th cup
  8. Dry fruits – 1tbsp
  9. Ghee – ½ tbsp.
  10. Water – 2cups for cooking rice & fenugreek+ 2tbsp
  11. Salt a small pinch

Instructions

  1. Heat Ghee in a non-stick pan.
  2. Add soaked rice and fenugreek seeds. Sauté for few seconds.
  3. Add water, salt and cook rice-fenugreek seeds until soft.
  4. In another wok or pan add grated jaggery and 2tbsp water. Let it dissolve.
  5. Add grated coconut, cardamom and nutmeg powder. Mix well.
  6. Add roughly crushed dry fruits. Mix well.
  7. Add jaggery mixture into cooked rice and fenugreek seeds. Stir and simmer for 1 minute. Switch off stove.
  8. Add coconut Milk. Mix well.
  9. Serve hot.
