Cardamom and saffron cupcakes

Ingredients to make Cardamom and saffron cupcakes

  • all purpose flour 130 gm
  • sugar granulated 100 gm powdered
  • egg 2 separated
  • vinegar 1 tsp
  • Baking powder 1 tsp
  • oil 1 cup
  • Milk 1/2 cup
  • saffron stands 10-12
  • cardamom powder 1/2 tea spoon
  • cardamom essence 1 tsp
  • almonds chopped 3 tsp for garnishing

How to make Cardamom and saffron cupcakes

  1. Take egg whites in a bowl.
  2. Preheat oven 180C for 10 minutes.
  3. Beat it with hand blender with a tsp of vinegar until peaks form.
  4. Now take egg yolks, sugar, cardamom powder and essence.
  5. Blend until sugar melts.
  6. Now add the oil and mix.
  7. Heat the milk and add saffron strands in milk. It will turn yellow.
  8. Sieve flour and baking powder 2-3 times.
  9. Add the dry ingredients to wet.
  10. Add saffron milk to make a smooth batter.
  11. Now add the egg white mix and very carefully mix with the batter in a cut fold method without disturbing the air incorporated in it.
  12. Pour in the muffin cups and bake for 25 minutes or u til a toothpick comes out clean.
  13. After 15 minutes add some chopped almonds on top.

My Tip:

Cakes tastes best in the second day.
