Ingredients Serving: 8

  1. 1 ltr full fat milk
  2. 1 small bowl fresh cream
  3. 1 small bowl basmati rice
  4. 1/2 tsp Cardamom powder
  5. generous pinch of saffron strands
  6. 1/2 small bowl chopped almonds, pistachios and casahews
  7. 2 tbsp Raisins
  8. 1 small bowl sugar
  9. julienne of almonds and pistachios
  10. Few saffron strands

Instructions

  1. wash the basmati rice strain it and keep it aside 30 mins before making the kheer.. start to boil the milk in a thick bottom pan...keep stirring at regular intervals so that it does not stick at the bottom...
  2. add the saffron at this point itself till so that it gives its complete flavor and color in the milk...
  3. rub the soaked rice so that it breaks into smaller granules...after the milk boils add the rice granules into the pan...stir it so that it mixes in the milk...cook it on a low flame till the rice in completely cooked....
  4. after the rice is cooked add the sugar...keep stirring till the sugar melts completely...add the fresh cream and cook for another 2 minutes..fresh cream will give a nice rich flavor to the the kheer...
  5. finally add the cardamom powder and chopped nuts and raisins....cook for another one minute mouth watering shahi kheer is ready to serve...
  6. while serving garnish with julienne of almonds and pistachios with few saffron strands
