ABOUT Kharvas RECIPE

It’s a traditional Maharashtrian dish which is prepared using jaggery or sugar. Kharwas is made from milk of a cow or buffalo that has just delivered. This milk is referred as colostrum. It is thick in consistency and need to be diluted with full fat milk while preparing the dish. In Maharashtra and konkan region it is very popular dish. It is highly nutritious and rich in protein and carbohydrates. It is called as kharvas in Marathi, poshu in konkani, Ginnu in telegu. It is very rare to get this milk. But sometimes available in local dairy farms. Since it is known to increase body heat, it is best avoided by pregnant women.

Ingredients Serving: 5

  1. Colostrum milk - 1/2 ltr
  2. Full fat milk - 250 ml
  3. Grated jaggery - 4-5 tbsp or 3/4 cup
  4. Saffron - 1 tsp
  5. Cardamom powder - 1 1/2 tsp
  6. Nutmeg powder - 1/2 tsp

Instructions

  1. COLOSTRUM MILK - 1/2 LTR FULL FAT MILK - 250 ML GRATED JAGGERY - 4-5 TBSP OR 3/4 CUP SAFFRON - 1 TSP CARDAMOM POWDER - 1 1/2 TSP NUTMEG POWDER - 1/2 TSP
  2. ADD 4-5 TBSP OR 3/4 CUP JAGGERY. KEEP STIRRING UNTIL IT DISSOLVES COMPLETELY.
  3. ADD 1 1/2 TSP CARDAMOM POWDER AND FEW SAFFRON STRANDS.
  4. ADD 1 TSP NUTMEG POWDER. STIR.
  5. POUR THE MIXTURE SLOWLY THROUGH FINE SIEVE INTO A LARGE BOWL.
  6. ADD 250 ML FULL FAT MILK. STIR WELL.
  7. ADD REMAINING SAFFRON. MIX WELL.
  8. POUR THE MILK IN A CONTAINER WHICH FITS IN A STEAMER, IDLI COOKER OR A COOKER.
  9. STEAM FOR 5 MINUTES ON HIGH FLAME AND 15 MINUTES ON A LOW FLAME. IF USING A COOKER REMOVE THE WHISTLE.
  10. INSERT A KNIFE OR FORK IN THE CENTER. IT SHOULD COME OUT CLEAN. OR IF ITS COOKED YOU WILL FIND JAGGERY WATER ON THE SURFACE OF THE KHARVAS.
  11. CUT INTO ANY DESIRE SHAPE. SERVE HOT OR CHILLED.
