Gajar Ka Halwa or carrot halwa is very popular Indian dessert. It is prepared using simple ingredients that are easily available at home.

Ingredients Serving: 2

  1. 4 medium carrots-yields approx 2 -2.5 cups grated carrot
  2. 1+1 tablespoons ghee or clarified butter
  3. 4 green cardamompods-take the seeds and crushed
  4. 2 cups whole milk
  5. 3/ 4 cup sugar(if required,add more)
  6. 1/4 cup raisins
  7. 10 cashew nuts
  8. A Pinch of saffron threads
  9. 1/4 cup pistachioandalmonds( soaked,peeled and chopped)

Instructions

  1. Rinse and peel the carrots. Grate the carrots coarsely using a cheese grater.
  2. Heat 1 tablespoon ghee in a heavy bottomed pan or non - stick, fry the raisins on low heat until they puff up. Remove and keep it aside. In the same pan, fry cashew nuts until golden brown.Remove from pan.Add 1 tablespoon ghee in the same pan and add crushed cardamom seeds and stir for about 30 seconds.Add the grated carrots to the pan and fry for about 3 minutes.
  3. Add the milk and bring it up to the boil.When the milk will start boiling, simmer the gas, stirring constantly.
  4. When the milk has 3 / 4th reduced, add sugar, cashew, raisins, and saffron to the pan and stir.
  5. Stirring continuously, for until all the milk is evaporated and the halwa is thick and glossy.
  6. Remove it in a bowl and set it aside. Garnish with chopped almonds and pistachio and serve hot.If you prefer you can have it cold also.

Gajar halwa is my favourite sweet in winters and that too when I prepare it. I usually add the dry fruits when the milk has dried up but now I'll try it this way .Thanks for a wonderful recipe
