Ingredients to make Mixed Vegetable Khichadi

  • 1 cup rice
  • 2 Tbsp moong dal
  • 2 Tbsp Toor dal
  • 1 carrot
  • 4 beans
  • 1 potato
  • 1/4 cup green peas
  • 1 onion
  • 1 tomato
  • 1 tbsp chopped garlic
  • 2 tsp cumins
  • 1/2 tsp turmeric powder
  • 1 tsp red chilly powder
  • 2 tbsp ghee
  • 1/4 cup finely chopped coriander leaves
  • 1 tbsp lemon juice
  • salt to taste

How to make Mixed Vegetable Khichadi

  1. HEAT 2 TBSP GHEE IN A PRESSURE COOKER, ADD 2 TSP CUMIN
  2. ADD 1 TBSP CHOPPED GARLIC
  3. SAUTE ON SLOW HEAT
  4. ADD 1 CHOPPED ONION, FRY TILL TRANSLUCENT
  5. ADD 1 CHOPPED TOMATO
  6. ADD 1/2 TSP TURMERIC POWDER
  7. ADD 1 TSP RED CHILLI POWDER
  8. ADD 1 CUP CHOPPED VEGETABLES OF CHOICE
  9. SAUTE FOR A FEW SECONDS
  10. ADD 2 CUPS WATER
  11. ADD 2 TBSP ARHAR DAL
  12. ADD 2 TBSP MOONG DAL
  13. ADD SALT TO TASTE
  14. ADD 1 CUP RICE
  15. MIX, PUT ON THE LID
  16. PRESSURE COOK FOR 3 WHISTLES
  17. ADD 1 TBSP LEMON JUICE
  18. ADD CHOPPED CORIANDER LEAVES
  19. MIX WELL, PLACE IN SERVING DISH
  20. SERVE HOT
