ABOUT Spiced Apple and Carrot Muffins! RECIPE

Today, I am sharing a recipe for the wonderfully aromatic 'Spiced Carrot and Apple muffins' that carry significantly lesser calories as compared to their fattier counterparts and are equally delicious too. The use of various ground spices make them extremely fragrant and exotic. Also, the use of Maple syrup instead of sugar provides yet another tasty dimension to them. Try these healthy & scrumptious muffins this holiday season and I guarantee you that your family and friends, young and old alike, will absolutely adore them!

Ingredients Serving: 3

  1. 1.75 cups All-purpose flour
  2. 2 carrots, peeled and grated
  3. 1 small apple, peeled and grated
  4. 1 tsp ground cinnamon
  5. 1/4 tsp ground Nutmeg
  6. 2 Cloves, grounded to fine powder
  7. 1/4 tsp of Ginger powder
  8. 3 tbsn spiced Almonds ( easily available at the super-markets)
  9. 1.5 Tsp Baking Powder
  10. 2 eggs, at room temperature
  11. 1/3 cup Canola oil or any vegetable oil
  12. 1/2 Cup Maple Syrup
  13. 1/2 cup yogurt
  14. 1/2 tsp Vanilla extract
  15. 1/4 tsp Salt

Instructions

  1. Pre-heat the oven at 180 degrees C.
  2. In a large bowl, combine together the flour, baking powder, salt, spiced Almonds and all the ground spices- Cinnamon, Nutmeg, Cloves and Ginger powder. Set aside.
  3. In a separate bowl, combine the oil and maple syrup and beat together very well with a whisk or an electric beater.
  4. Next, add the eggs and beat well again.
  5. Finally, add the yogurt and vanilla. Mix well to form a smooth batter.
  6. Combine the wet batter, along with the grated carrot and apple, into the flour mixture, stirring until everything is well-mixed and there are no lumps. Do not over-mix!
  7. Pour the batter equally in the muffin liners and bake for 20 – 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and cool on a wire rack. Enjoy with your favorite frosting or as it is!
