ABOUT Kesari Phirni RECIPE

This is a type of rice pudding , prepared with soaked and then grinded raw rice paste, full cream milk , sugar and cardamom powder.

Ingredients Serving: 6

  1. 1 cup rice soaked for an hour or so
  2. Milk ( full cream) one and a half litre
  3. Sugar 2 cups
  4. Cardamom powder ( pinch)
  5. Nuts to garnish (Pistachio)

Instructions

  1. Soak the rice with water for an hour . Bring the milk to a boil in a heavy bottomed vessel .
  2. Meanwhile grind the rice to a coarse mixture paste and then add this to the milk together with sugar.
  3. Keep on simmering the milk on low flame , till it is reduced to 3/4 of its original quantity. Keep on stirring , since it will have a tendency to stick to the bottom.
  4. Take few strands of kesar and dissolve in half cup of milk.
  5. At the end add kesar and cardamom powder.
  6. After the phirni is done, transfer the kheer to earthen pots and chill it in a freezer , till it gets set.
