ABOUT Fiery Ghost Pepper Hot Sauce Fajitas! RECIPE

Now listen folks,let me warn you! This recipe is not for the faint-hearts. Ghost Peppers or what we call as "Bhoot Jolokiya" are the hottest peppers in the entire world!! So,needless to say, any sauce which uses this ingredient will be astronomically hot. So, while the most authentic recipes for hot sauce require 6-7 ghost peppers for the procedure, I feel comfortable in using just 2-3 of them and substituting the rest with the dried Kashmiri red chillies, which are much milder! These fajitas with a filling of tofu and hot sauce are pretty spicy but not unbearably so. At the same time, they are saucy and delicious! Mozzarella cheese compliments the filling quite nicely and also, reduces the spice factor a little bit. While making this very hot sauce, please be careful and wear gloves at all times while handling the ghost peppers. This is a great recipe for all the spice lovers out there!!

Ingredients Serving: 3

  1. For the Ghost pepper Hot sauce-
  2. 3 ghost peppers
  3. 5-6 dried Kashmiri Red chillies (available at any Indian store)
  4. 1 Red bell pepper
  5. 8-10 Garlic cloves, finely chopped
  6. 2 tbsn Tomato paste/puree
  7. A large piece of Ginger, peeled and grated
  8. 2 tsp soya sauce
  9. 1 tsp vinegar
  10. 1 tbsn Tomato ketchup
  11. 3-4 tbsn vegetable oil
  12. 2 tsp sugar
  13. Salt & Pepper to taste
  14. Also needed-
  15. 3 large Tortillas
  16. 1 cup Tofu, cut into small cubes
  17. 1 tbsn oil
  18. 1 tbsn butter
  19. 1 tsp Fajita seasoning or any seasoning of your choice
  20. 1 red onion, sliced
  21. 1 bell pepper, sliced
  22. 1 cup grated Mozzerella
  23. Salt and pepper to taste

Instructions

  1. To make your hot sauce, de-seed the dried Kashmiri red chillies and soak them in water for atleast an hour.
  2. Wearing gloves, remove stems and seeds from ghost peppers and chop them roughly. Set aside.
  3. Combining the soaked Kashmiri red chillies and the chopped ghost peppers in a food-processor, blend together with little water to get a thick, red paste. Also, preserve the water in which u had soaked the chillies.
  4. Heat the vegetable oil in the wok.
  5. Add the chopped garlic & grated ginger in hot oil and fry for about 10 seconds. We do not have to brown them.
  6. Add finely chopped Red bell pepper and saute for 4-5 minutes.
  7. Add the red chilly paste and fry till you see the oil leaving the mixture.
  8. Add your tomato paste/puree and fry again, till the oil leaves the edges.
  9. Add 2-3 tbsn of water from the bowl where you had soaked the chillies and while the sauce simmers, add the soya sauce, vinegar, ketchup salt, pepper and sugar.
  10. Cook for around 6-7 mins more on low flame till you again see the oil leaving sides. The resulting sauce should be absolutely thick and not at all watery.
  11. Check and adjust salt and sugar as per your preference.
  12. Cool completely and collect in a jar. Make sure there’s a layer of oil over the top of the sauce. This increases the shelf-life of the sauce. Refrigerate. Your fiery Hot sauce is ready. You can store it for upto one month.
  13. To make your fajitas- In a pan, heat 1 tbsn oil over medium heat.
  14. Add the sliced onion and bell peppers. Saute for a few minutes, till it turns a bit translucent.
  15. Add the tofu pieces and stir-fry for a couple of more minutes.
  16. Throw in your fragrant fajita seasoning and fry for a few seconds more.
  17. Finally, add 2 tbsn of your home-made hot sauce and mix well. Cook for 2-3 minutes and switch off the flame. Adjust the salt according to your preferance. Your spicy and delicious filling for your fajitas is ready!
  18. Heat a grill-pan or a normal frying pan to make your fajitas.
  19. Add your butter and wait till it melts.
  20. Place a tortilla on it.
  21. On half of your tortilla, spoon in some prepared hot sauce tofu filling evenly.
  22. Sprinkle the mozzarella cheese generously on top of the filling and also add some salt and pepper.
  23. Fold the vacant half of the tortilla on top of the tortilla and flip carefully. Let the fajitas cook on each side for 2-3 minutes, till the cheese melts and the surface is nicely roasted and golden brown.
  24. Prepare all your fajitas this way and serve hot with dip of your choice. Enjoy!!!
