Saffron Crème brûlée

Ingredients to make Saffron Crème brûlée

  • 12 threads of saffron + 6 threads for garnishing
  • 4 cardamom pods
  • 1/3 cup castor sugar
  • 3/4 cup corn starch
  • 100 grams white chocolate
  • 4 and 1/2 cup milk
  • 1 cup fresh cream
  • 1/2 tea spoon of rose water
  • pistachio to garnish

How to make Saffron Crème brûlée

  1. Roast saffron a bit and then crush it then keep it aside. crush cardamom as well.
  2. Melt white chocolate in microwave, keep stirring in between and be careful, it burns very fast.
  3. take one cup cold milk and mix corn starch well in it.
  4. take rest of the milk, add cream and sugar and bring it to boil
  5. mix the cold milk mixture to hot milk and stir to avoid lumps
  6. Add saffron and cardamom to mixture, stir until it gets very thick. take it off the flame
  7. add melted chocolate and mix well
  8. add rose water
  9. sieve the mixture and then fill it in cups or bowls as per your choice. let it chill and set for 2-3 hours. This custard will firm up by chilling since it has chocolate in it yet it will remain creamy.
  10. let it set in refrigerator for about 2 hours and then sprinkle sugar over it and caramelize it by blow torch. then sprinkle some saffron threads and toasted pistachios
  11. serve immediately

My Tip:

quality of ingredients is key to a fantastic recipe, i have used saffron and pistachio from Afghanistan and a good quality white chocolate.
